The History of King Cake
The Mardi Gras king cake is the life of the party during Carnival season, with a history as rich as its flavors! Believe it or not, this tradition dates back to 12th-century France. Back then, people celebrated the Feast of the Epiphany—also called Twelfth Night or King's Day—twelve days after Christmas. To honor the three wise men who visited the Christ Child, they baked a special cake. The circular shape symbolized the winding journey the kings took to outsmart King Herod as he hunted them. And hidden inside? A little surprise, like a bean, pea, or coin. Whoever found it was crowned "King for a Day" and blessed with good luck for the year ahead.
When French settlers brought this tradition to Louisiana in the 18th century, it got a Mardi Gras makeover. Here, Twelfth Night kicks off the Carnival season, which ends with the big Mardi Gras celebration. Over time, the hidden trinket evolved into a tiny plastic baby, representing the Christ Child. If you’re lucky enough to find the baby in your slice, congratulations: you’re in charge of hosting the next king cake party. No pressure!
Today’s king cakes are just as festive as ever. The original king cake was an almond-filled puff pastry, but in the Cajun way, we've made it our own. The ring shape has endured the centuries, but now they're crafted with soft, cinnamon-infused dough, and topped with a colorful glaze in purple (for justice,) green (for faith,) and gold (for power.)
